Everyone has got a favourite dish at some restaurant, but in order to save money it is worth trying to cook this dish yourself at home.
That’s exactly how the amazing @live.love.balance came up with this delicious meal.
Here’s what you need to prepare her spaghetti dish for 4 people:
2 large tomatoes, sliced into small wedges
3 tbsp olive oil
1 onion, finely diced
5 garlic cloves, crushed (helps to add sea salt to soften)
2 tsp rose harissa paste
1/2 tsp cracked black pepper
2 organic chicken breasts, sliced into thin strips
1 small courgette, thinly sliced
1/2 can chopped tomatoes
230ml organic double cream
2 tbsp grated parmesan cheese
2/3 pack Organico Spaghetti
2 handfuls of rocket to serve (optional)
Juice of 1/2 lemon
Pinch of sea salt
Method:
Place tomatoes into small baking dish, drizzling 1 tbsp of olive oil over.Bake in the oven at 200 degrees, for 25 mins.Meanwhile, add 2 tbsp olive oil to a large saucepan and heat on medium.Add onion and stir until lightly browned. Add crushed garlic, harissa and pepper to the pan, and stir everything together.Add chicken and courgette to the pan and combine.Cook until chicken is lightly browned, then add tinned tomatoes, cream and cheese.Leave to simmer for about 10 min, until the chicken is cooked through.Boil spaghetti, drain, and add to saucepan.Stir everything to combine.Serve with a side of rocket topped with a pinch of sea salt and a drizzle of lemon juice.
