Minna Wood created this gluten-free and sustainable pizza recipe using several of our Organico tomato products as well as our sustainably-fished Fish4Ever Sardines and Anchovies. Take your pizza to the next level and try this variant, we are sure you won't be diappointed!
Serves 2 (can be easily doubled)
Organico Products: Chopped Tomatoes, Sun-Dried Tomatoes, Passata
Ingredients
1 gluten-free pizza baseTomato sauce:
A big handful of fresh mini plum tomatoes, cut into halves OR ¼ tin of Organico chopped tomatoes
1 red onion, sliced
3 cloves of garlic, crushed
5 Fish4Ever anchovy fillets
5 Organico sun-dried tomatoes
2 tbsp Organico tomato passata
Salt and pepper to taste
Toppings:
A few small destemmed leaves of cavolo nero kale
¼ onion squash/butternut squash
Lemon juice4 tbsp olive oil/coconut oil/ghee
1 tin of Fish4Ever sardines
1 tsp dried oregano
Salt and pepper to taste
Method
1. Preheat oven to 160°C.
2. Make the tomato sauce by cooking all ingredients in a small saucepan for an hour, adding a splash of water if it becomes too dry. When cooked and ready, blend/process the sauce to an almost smooth consistency (use a small blender/food processor – or you can also chop all ingredients well before cooking and no blending is required at the end).
3. Put the kale leaves in a measuring jug and pour boiling water from the kettle onto it. Then drain. Add your chosen fat into a frying pan and sauté drained kale with salt and pepper. Spritz with a little lemon juice.
4. Cut the squash into slices and roast in the oven with your chosen fat and salt and pepper. When cooked, take out and turn the oven temperature to its highest setting (approx. 230-250°).
5. Take the sardines out of the tin and halve them into fillets, discarding the central bone.
6. Lay the pizza base onto a round perforated pizza oven tray and top with tomato sauce, kale, squash and sardines. Sprinkle dried oregano on top.
7. Cook the pizza in the oven for 10-15 minutes. Keep a close eye on it as it will cook quickly and will dry out/burn easily.
