What you’ll need…
1 tin of fish4ever mackerel fillets
1 small ciabatta bun
4 small cos lettuce leaves
1/5 cucumber
2 radish
1/3 spring onion
Handful cherry tomatoes
1 tsp organico capers
1 tsp horseradish
2 tsp hollandaise sauce (I used a jar of it)
1 garlic clove
1/4 lemon
Salt and pepper
What to do…
First slice your ciabatta in half width ways and toast until the edges brown.
Now prepare your salad: using a peeler peel strips of cucumber lengthways from all sides of the cucumber. Slice your cherry tomatoes lengthways, do the same with your spring onion.Next cut your radish into thin circles.
Now prepare the horseradish cream by adding the horseradish, hollandaise, lemon juice and a dash of salt and pepper. Finely cut your garlic, add and mix thoroughly.
Heat a small frying pan, whilst it heats salt and pepper on both sides of your mackerel fillets. Fry in the pan for approx. 1 minute each side until they start to golden.
Now to assemble, place your ciabatta on a plate, arrange your salad pieces on top making it look attractive. Now add on your mackerel fillets and dollop a large spoonful of your horseradish cream on top. Sprinkle with capers and a little black pepper.
